It was survival wisdom passed down through generations who had very little and made everything count. At Nuance, that wisdom lives in everything we do.

Vietnamese kitchen culture has never believed in waste. We didn't learn this from a sustainability consultant. We learned it from generations of cooks who understood that how you treat your ingredients is a reflection of how much you respect your craft. At Nuance, this philosophy is built into our entire production system. All food is precisely measured and portioned — nothing is discarded if it can be transformed.

In Our Operations

Reuse first. Compost second.

We were the first catering company in Australia to introduce washable bamboo plates to a commercial event environment. Our canapé range is built around reusable mini dishes — a full cocktail event served with near-zero single-use waste. At Greenhouse, our dedicated event space, reusable catering platters are standard. We also reuse glass jars for our house-made sauces, and source second-hand clothing and textiles for kitchen cleaning rather than buying new materials. Where we cannot reuse, we choose compostable packaging only.

In Our Energy

Powered by choice, not convenience.

We choose to pay a premium for green energy to power all of our kitchen operations. It costs more. We do it anyway — because the true cost of cheap energy is something we are not willing to pass on to the planet.
